These easy 6-Ingredient Energy Bites are simple to make, packed full of energy-rich ingredients, and are a snack to feel good about!
Passed on to me by my 2nd grade teaching mother-in-law, this was a quick snack she always had on hand whether for her own school lunches or after school snacks. As I became part of the family, I quickly adopted this recipe in my own kitchen!
Coming together in a matter of minutes, these energy bites can be made with simple pantry ingredients I usually have on hand! And even better they’re irresistibly good!
These Easy Energy Bites are the perfect make-ahead snack, quick “pick-me-up”, or a fast breakfast!
For these Easy Energy Bites, you’ll need the following ingredients:
Quick Oats – Also called rolled oats – these oats serve as the foundation of the bites.
Flaxseed – Can use either ground or whole flaxseed – full of proteins, fiber, and healthy omega-3 fatty acids, this is a great addition to this yummy snack!
Peanut Butter – I prefer to use creamy over chunky peanut butter – this is the bulk of the protein in the energy bites and helps bind all ingredients together.
Honey – Not only is this a healthy, natural sweetener, but it also helps to bind the bites together.
Vanilla Extract – For a little extra flavor.
Dark Chocolate Chips – You’ve got to have a little chocolate (let’s be honest!)
To Make the Energy Bites:
Warm the peanut butter and honey together in the microwave for 30-60 seconds or until both are warm and can mix together well.
From there, fold in the remaining ingredients and stir to combine well!
With all ingredients added in, it’s time to make the bites! *One note: if you’re in a hurry, press the mixture into a greased 8″x8″ or 9″x13″ pan to make energy bars.*
If you want to make the bites, roll dough into tablespoon sized bites and place onto waxed paper to set up. Store in an airtight container; would recommend placing in a refrigerator to keep chocolate chips cool and from melting.
Whether you’re a hurried parent or teacher, looking for a quick snack or addition to school lunches, these 6-Ingredient Energy Bites are a great addition to the day. Packed with ingredients to feel good about, these bites are a good source of quick energy and a snack to hold you to dinnertime!
